To celebrate Ramadan, we are bringing to you over the next few weeks some recipes from the excellent Lina Saad, author of Ramadan Express. Today, Lina Saad has got for us the irresistible Apple Cake.

3 free range eggs
1 ½ cup caster sugar
2 ½ cup all purpose flour
¾ cup vegetable oil
1tsp baking powder
¾ tsp bicarbonate of soda
30g grounded pistachios
30g sunflower seeeds
¼ cup crème fraiche
1tsp vanilla extract
Sprinkle of grounded nutmeg
5 apples (any origin) grated and soaked with 1tsp grounded cinnamon and some flour to avoid sticking down Muscavoda sugar scattered in the bottom of the mould after being greased thoroughly
Grate the apples and flavour with some cinnamon and the flour tin to avoid sticking in the bottom of the mould.
Into a stand mixer or a bowl whisk the eggs and sugar until light in colour, creamy and sugar has dissolved.
Add half of the flour’s quantity with the bicarbonate of soda, baking powder and vanilla and give it a good whisk for 5 minutes or until all evenly mixed.
Add the oil and crème fraiche and carry on mixing, add the rest of the flour and mix well for about extra five minutes until all evenly well combined.
Add the grounded pistachios and sunflower seeds and fold gently into the batter.
Grease the mould thoroughly all around the corners, scatter the muscovado sugar in the bottom and add the grated apples evenly
Pour the batter into the mould and tap slightly on the surface to even it all up and bake in the oven at 170C for an hour depending on your oven’s temperature or until all thoroughly cooked.
Enjoy with a drizzle of crème fraiche, vanilla ice cream or just cream.
