This book hosts a compendium of my favourite recipes which can be cooked outdoors on a barbecue or using traditional indoor kitchen methods. In this book you will find good, honest cooking; meals that you will love to eat and love to serve to family and friends. None of the photography has been staged, every photo was taken just before the food was eaten, so again there is honesty in the way it is presented.Most of the recipes are cooked using the more gentle, indirect barbecue method, positioning food away from the fire, thus reducing the risk of creating a bitter flavour caused by over-charring or burning. So, whether you want to cook outside on your barbecue or indoors in your kitchen, there will be something in this book for you. I hope you enjoy recreating some of these recipes as much as I have enjoyed sharing them with you.

An ex-IT Consultant, turned livestock farmer and always a keen cook; Jackie has been barbecuing for more than 35 years.   In 2004 she became the first and to date only, non-American to win the coveted ‘Grand Champion’ Title at the Jack Daniels Invitational BBQ Competition in Lynchburg, Tennessee.

 

Jackie now runs a BBQ Cookery School in Kent, she also produces her own range of award winning Rubs and Spice Blends.  She has worked with top chefs and complete beginners, introducing them to low and slow cooking over wood. She is one of the early pioneers of bringing American Style BBQ to the UK.

    People not familiar with Jackie are in for a treat. She literally is the BBQ Queen of England (and beyond!). She has cooked for the very best in the world and is a prize winning bbq cook. Those who do know about her, will know this is all her. The style, the recipes, the stories and the photos. This is an authentic cook book. This book arrived a few days ago and I have already tested some of the recipes. My family have been eating BBQ for the last three nights and for the next few weeks! There are some special recipes on here. The Tomahawk with Bone Marrow Mash is phenomenal. The beef brisket was idiot proof (lucky for me). The sides are wonderfully different. The preserves at the end was a nice surprise (haven’t tried them yet). The best thing is the personal touch in this book. Clearly written with passion and stories from a very talented cook. Thoroughly recommend.

    I've booked to go on Jackie's bbq workshop on the 22nd September so thought it would be fitting to try her book out, glad I did! I've had 2 BBQ's and used three of the sauces on chicken wings! The sauces were a winner, love the sweet Carolina sauce!
